  • 1/2 tsp salt (for blanching)
  • 1/2 tsp toasted sesame oil

Cucumber Pickling

  • 1/2 tsp salt
  • 1 tsp vinegar
  • 2 tbsp water

How to Make It

Step 1

Let the freshly cooked warm rice cool slightly. Add 2 tsp sesame oil, 1/4 tsp salt, and 1 tsp sesame seeds, then gently fold with a rice paddle to combine.

Step 2

Beat the eggs with a pinch of salt. Pour into a lightly oiled pan and cook into a thick egg sheet. Let it cool completely, then slice lengthwise into 5 strips.

Bring water to a boil with 1/2 tsp salt and blanch the spinach for 30 seconds. Rinse in cold water, squeeze out the excess moisture, and toss with 1/2 tsp sesame oil and a pinch of salt.

Deseed the cucumber, slice lengthwise into thin strips, and soak in the water mixture with 1/2 tsp salt and 1 tsp vinegar for 10 minutes. Squeeze out all moisture with paper towels.
