Step 1

Rinse the soybean sprouts thoroughly under cold running water and drain in a colander. Finely chop the scallions and thinly julienne the carrot for color.

Spread the washed soybean sprouts evenly across the bottom of a pot and pour in 500 ml of water. Cover with the lid, turn on the heat, and cook on medium heat for 5 minutes once it comes to a boil. Keep the lid closed during cooking.

Step 3

After 5 minutes, turn off the heat and open the lid to check. When a rich soybean sprout aroma rises without any raw smell, they are perfectly cooked.

Step 4

Immediately rinse the cooked sprouts in cold water to stop the cooking process, then drain thoroughly in a colander. Cooling them quickly keeps the sprouts nice and crunchy.
