  • 3.3L water (300ml for tenderizing, 3L for boiling)

Topping Seasoning

  • 5 tsp red chili powder (Gochugaru)
  • 1/2 tsp spicy chili powder
  • 1/2 tsp flavored salt (Mat-sogeum)
  • 1/2 tsp MSG
  • 1/2 tsp black pepper powder

Dumpling Soup — 1 Serving

  • 4 king dumplings (Wang-mandu)
  • 500ml beef broth
  • 2 tsp mild tuna fish sauce (Tuna liquid)

How to Make It

Step 1

Blend 1 apple with 300ml of water in a blender. Pour the mixture over the beef, let it tenderize for 30 minutes, then rinse thoroughly.

Thinly slice 2 green onions for seasoning.

Step 2

In a large pot, add the beef, 3L of water, and aromatics (2 green onions, garlic, onion, whole peppercorns). Simmer for 40–50 minutes.

Step 3

Strain and reserve the clear broth. While the beef is still warm, shred it finely along the grain.

Step 4

In a mixing bowl, combine the shredded beef, sliced green onions, and seasonings (chili powders, flavored salt, MSG, black pepper powder), then mix well by hand.

Step 5

Bring 500ml of broth and 2 tsp of  mild tuna sauce to a boil. Add the dumplings, cook until done, and transfer into a serving bowl with the broth.

Step 6

Place 2 tsp of the beef topping over the dumplings to finish.

Storage

Store leftover beef topping in an airtight container in the refrigerator.

It can be kept for up to 3 weeks.
