How to Make It

Step 1

Cut the tofu into bite-sized cubes. Whisk the eggs well in a bowl. Finely chop all the vegetables (onion, green and red bell peppers, carrot, and green chili pepper) and thinly slice the green onion.

Step 2

In a separate bowl, mix 200ml of water with 3 tsp of oyster sauce, 1 tsp of tuna sauce, 1 tsp of cooking wine, 1 tsp of oligosaccharide syrup, and 1 tsp of potato starch to make the sauce. Mix well until no lumps remain.

Step 3

Heat 4 tsp of cooking oil in a pan. Add the tofu and half (1/2) of the whisked eggs, and stir-fry for 30 seconds. Then, pour in the remaining eggs and stir-fry for another 30 seconds. Transfer the tofu and eggs to a separate plate.

Step 4

Add 3 tsp of cooking oil to the pan. Add the sliced green onion, 1 tsp of minced garlic, and the green chili pepper, then stir-fry for 30 to 40 seconds until fragrant. Next, add all the remaining vegetables (onion, bell peppers, and carrot) and stir-fry for an additional 30 to 40 seconds.

Step 5

Give the prepared sauce a quick stir (as the starch may have settled), then pour it over the stir-fried vegetables. Stir constantly while bringing it to a simmer.

Step 6

Once the sauce starts to thicken, add the cooked tofu and eggs back into the pan along with 1 tsp of sesame oil. Gently mix for about 30 seconds to let the flavors blend, then turn off the heat. Serve on a plate.
