  • 200g pork tenderloin or rear leg (lean, fat-free cut)

Seasoning

  • 1/3 tsp flavored salt
  • 1/4 tsp ground black pepper
  • 1 tsp cooking wine (Mirin)

  • 5 tsp sugar

Vegetables & Fruit

  • 30g cucumber
  • 20g carrot
  • 20g onion
  • 20g pineapple

Starch Slurry

  • 1.5 tsp potato starch
  • 4 tsp water

How to Make Tangsuyuk

Step 1

Cut the pork into approximately 1cm × 1cm × 5cm strips. Deseed the cucumber and cut it into bite-sized pieces. Cut the carrot, onion, and pineapple into matching sizes. In a separate bowl, lightly whisk the egg white.

Step 2

Mix the pork with cooking wine, flavored salt, and black pepper. Marinate for 30 minutes. In another bowl, mix potato starch with water and let it settle for 30 minutes.

Step 3

Pour off the clear water from the starch, leaving only the starch sediment. Add the egg white and cooking oil, then mix until smooth. Coat the marinated pork evenly.

Step 4

Heat the frying oil to 180°C (350°F). Test with a small drop of batter. Fry the pork pieces one at a time until lightly golden.

Step 5

After frying for about 2 minutes, remove the pork with a strainer. Reduce the heat slightly and fry for another 3 minutes. Drain well.

Step 6

Let the pork rest for about 1 minute. Reheat the oil and fry again for 2 minutes until extra crispy and golden.

Step 7

Bring the sauce ingredients to a boil. Add the cucumber, carrot, onion, and pineapple. Cook for 1 minute, then slowly stir in the starch slurry until the sauce becomes thick and glossy.

Step 8

Cómo Preparar el Tangsuyuk

Paso 1

Corta el cerdo en tiras de aproximadamente 1 × 1 × 5 cm. Corta el pepino, la zanahoria, la cebolla y la piña en trozos similares. Bate ligeramente la clara de huevo.

Paso 2

Mezcla el cerdo con el vino para cocinar, la sal y la pimienta. Marina durante 30 minutos. Mezcla la fécula con el agua y deja reposar otros 30 minutos.

Paso 3

Retira el agua clara de la fécula. Añade la clara de huevo y el aceite. Mezcla bien y cubre el cerdo.

Paso 4

Calienta el aceite a 180 °C y fríe el cerdo hasta que quede ligeramente dorado.

Paso 5

Retira el cerdo y deja escurrir. Baja un poco el fuego y continúa friendo durante unos 3 minutos más.
