Step 1
Cut the beef into bite-sized pieces.
Cut the green onions into 7–8 cm (3-inch) long pieces.
Finely mince the garlic and ginger.
Step 2
In a bowl, combine 1 egg white, 3 tsp potato starch, 3 tsp cooking oil, and 1/4 tsp ground black pepper. Whisk until smooth to form a velvet batter.
Add the sliced beef, toss well to coat, and let it marinate for 30 minutes.
Step 3
In a small bowl, mix 80ml water, 3 tsp soy sauce, 2 tsp sugar, 2 tsp oligosaccharide, and 1 tsp oyster sauce. Set aside.
Step 4
Heat 3 Tbsp of cooking oil generously in a pan. Add the marinated beef and fry until it is about 70–80% cooked.
Transfer the beef to a plate, leaving the oil in the pan.

Paso 1
